Ingredients:

- 2 tbsp olive oil or vegan butter

- 1 medium onion, diced

- 1 tsp smoked paprika

- 2 medium sweet potatoes, peeled and cubed

- 4 cups vegetable broth

- 2 cups chopped collard greens (stems removed)

- 1 can (15 oz) coconut milk or plant-based cream

Instructions:

1. Heat olive oil in a large pot over medium heat. Add onion and garlic, sautéing until fragrant and soft.

2. Stir in smoked paprika, cumin, and cayenne (if using). Cook for 1 minute to bloom the spices.

3. Add sweet potatoes and vegetable broth. Bring to a boil, then reduce to a simmer and cook until the sweet potatoes are tender, about 15 minutes.

4. Add collard greens and cook for another 5-7 minutes until wilted.
